Assignments that are automatically graded that are not tests

Would it be possible to create another type of assignment that is like a test, but isn't a test?  We've been using tests for things like reading assignments, short answers, etc.  It would be nice for students to have the ability to open and close it when needed, as well as have a due date for those types of assignments.
