Hey Carlos - We have been looking for an iPad centric POS system but haven't found one that really works well for us.  Currently we are using Square.  www.squareup.com and it is working well for us...

We use forms all the time as well and use an awesome company called wufoo.com. They have an API and it would be awesome to see sone integration with them. :)
