Agreed. I am currently running an independent study along with my in-class course. All due dates are identical. The option to clone due dates would be wonderful.

So if I set the points to 10 when I set up my gradebook, add 7 questions to the quiz when setting up the quiz, and then edit the value of the quiz from 10 to 10, will it do the same thing?

True, but it's a harder sell when you're trying to get good faculty buy-in as you start, especially with adjunct faculty members. It would be a great tweak!
