There should be a way to add an emergency contact to a student without having to make them a person in populi, and just have a field for their name, contact information and relationship that gets saved with the student and not as a separate person.

You could create a custom info field for this purpose, but we don't really recommend that. All things considered, your data would be a lot more useful with the Emergency Contact entered as an actual person in the system. Creating a person is as simple as entering a first and last name and clicking Save. The vast majority of Emergency Contacts are people you would want in there anyway--parents of students, for instance, who might double as donors in the future. Or, for that matter, roommates or family members or any number of other people...
